Prepare the filling

In a large mixing bowl, combine the ground pork, shredded cabbage, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, sugar, and salt. Mix until well combined. Set aside
Knead the dough

Mix flour, bread flour, and salt in another bowl. Gradually add hot water while mixing until the dough comes together.

Knead the dough for about 5-7 minutes until it becomes smooth and elastic. Cover with a wet cloth and leave for 30 minutes.
Make the dumplings

Roll out the dough
Roll out the dough on a floured surface into a long cylinder shape. Cut the dough into small pieces about 1 inch in diameter.

Roll each piece into a small ball, then flatten it into a circle with a rolling pin. Keep in mind that the edges should be thinner than the middle.
