Instructions

Prepare the filling

  1. In a large mixing bowl, combine the ground pork, shredded cabbage, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, sugar, and salt. Mix until well combined. Set aside

Knead the dough

  1. Mix flour, bread flour, and salt in another bowl. Gradually add hot water while mixing until the dough comes together.

  2. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. Cover with a wet cloth and leave for 30 minutes.

Make the dumplings

  1. Roll out the dough

Roll out the dough on a floured surface into a long cylinder shape. Cut the dough into small pieces about 1 inch in diameter.

  2. Roll each piece into a small ball, then flatten it into a circle with a rolling pin. Keep in mind that the edges should be thinner than the middle.

  3. Filling the dumplings

Place a spoonful of pork filling in the center of each dough circle. Be careful not to overfill. Using your fingers, moisten the edges of the dough with water.

  4. Fold the dough

Fold the dough over the filling to form a half-moon shape. Seal tightly. Pinch and pleat the edges for.

  5. Repeat with the remaining dough and filling.

Cook the dumplings

  1. Boil water in a large vessel. Gently drop the dumplings into the boiling water and stir gently to prevent sticking.

  2. Cook for about 5-6 minutes, or until the dumplings float to the surface and are cooked through. Remove with a slotted spoon and strain.

Make Dipping Sauce

  1. In a small bowl, mix soy sauce, white distilled vinegar, and sesame oil until well combined.

Serve

  1. Take out the cooked dumplings in a serving plate. If desired, garnish with chopped green onions and sesame seeds. Serve hot with dipping sauce on the side.
